Tremella and Chili Bamboo Shoot Soup (Vegan MoFo 10/7/11)

Tonight’s ingredient I’ve never tried before: Tremella (aka Snow Fungus)!

When I went to the giant Asian market to pick up ingredients I haven’t tried before for MoFo, I knew this tremella would be perfect. I had no idea what to expect- would it be gross or awesome? Here it is after soaking in water for 20 minutes- it expanded and softened a lot. It didn’t have much flavor on its own, and was sort of crunchy/chewy.

I decided to make soup with it, along with garlic, onion, yellow chives, ginger, baby bok choy, carrots, organic soba, Better than Bouillon vegetable base, vegetarian mushroom oyster sauce, dark soy sauce, sesame oil, chili oil, daikon radish, siracha, and another of the new ingredients I picked up at the asian market- chili bamboo shoots:

I really liked both the tremella and the bamboo shoots and would definitely buy them again.
