Chocolate Marshmallow Thingies (Vegan MoFo 10/17/11)

On Monday I was feeling super lazy and bummed because work was annoying and I didn’t do that great at the art show I spent hours and hours preparing for, and I felt like maybe I was getting sick, and I skipped aerials class because I was being so lazy and cranky and I googled “craft show failure” and got a computer virus from someone’s stupid blog that basically would have wrecked my computer if it weren’t for my IT genius boyfriend. I ate leftover pizza for dinner but still felt like I should make something for MoFo. So I decided to try making something for dessert with the Sweetened Condensed Soymilk. Given that the whole day was pretty much a flop (the highlight was, literally, finding a piece of rusty metal in the street that I might be able to use for an art project), I’m not surprised that what I ended up making turned out kind of meh.

I had a bag of vegan marshmallows and some walnuts and some chocolate so I found a recipe for some sort of candy involving those things (actually the recipe called for pecans but I just used walnuts). I don’t even know where the recipe came from but I’m not going to bother hunting for it because it wasn’t that good. Basically the recipe involved melting a lot of butter (Earth Balance margarine in my case), mixing in the condensed soymilk, then melting the chocolate into that, then mixing in the marshmallows and walnuts and making little piles of this stuff on a cookie sheet. I let it sit on the counter for a while but it didn’t quite solidify, so I put it in the freezer which did the trick.

Honestly, I wouldn’t get this Condensed Soymilk again unless I had some sort of recipe in which it was absolutely essential. It tastes ok at first but has a really weird aftertaste. These candies or blobs or whatever they are turned out ok, but I wouldn’t make them again, and I wish I hadn’t wasted all my marshmallows in them since I’d rather have marshmallows for hot chocolate. Oh well.
