Pickles!

Have too many CSA veggies? Make pickles! I had a ton of cucumbers and just happened to have a bunch of dill on the verge of wilting away in the fridge drawer, so I made some refrigerator dill pickles from the wonderful Joy of Pickling book. I added a few extra chili peppers since I want them to be spicy!

When we made the big Mideast Feast for the 4th of July, the only thing missing was those bright pink turnip pickles that you can sometimes get a falafel places. So we ordered a bunch of Hakurei salad turnips from the CSA, and put them in jars along with some beet slices, celery leaves, and vinegar brine.  These will sit out on the counter for a full ten days and the turnips will absorb the color from the beets. Recipe is also from Joy of Pickling.

Lastly, a fresh jar of kimchi! I had used the last of the old jar a while ago and never got around to making more, which is sad because I really love kimchi. It makes any boring old stirfry interesting. There are countless recipes out there but I love David Lebovitz’s recipe. One of these days I’ll branch out and try something new. There are a couple of interesting-sounding ones in Joy of Pickling, including one using daikon radish. Hmm, I have a few daikons sitting around, maybe I’ll try that…Also I’m waiting for jalapenos to come in from the CSA so I can make another big batch of pickled jalapenos. Yum.
