Thanksgiving remix! I made a double batch of pie crust when I made the apple pie for thanksgiving. And although the seitan roulade was delicious, we didn’t really feel like eating it again. So I scraped out the filling and cut up the seitan into little chunks and cooked them up with some onions, garlic, carrots, celery, potatoes, mushrooms, leeks, and veggie broth and various herbs to make little potpies for dinner tonight. When I make the filling I just make it extra liquidy, then thicken it a bit with some flour, and then scoop out the solid parts to put in the pies. Then the rest of the liquid gets strained and becomes gravy to go with the pies.
