Vegan MoFo Day 14- Chicken and Waffles (aka totally unhealthy breakfast for dinner)

There is little aesthetic or nutritional value in this meal, but it sure tasted good! I even bought a waffle iron for the occasion. I’ve made fried seitan a bunch of times but wanted to try something new so I used this recipe for Southern Fried Vegetarian Chicken. Definitely a winner! The breading stuck to the seitan really well, and while I was a little skeptical about the use of mustard, I think it did make the flavor more interesting.

It is surprisingly difficult to find a plain, ordinary vegan waffle recipe online. I found lots of oddball things like ginger-peach waffles, and the inevitable recipes that include banana. (One of my huge dislikes about vegan food when I first went vegan was that EVERYTHING seemed to include banana. While it does indeed add moisture and act as a binder, it also makes everything really dense and heavy and also TASTE LIKE BANANA! Ugh.)

I ended up using this recipe from Waffle Party. I used all white flour, because I didn’t want dense healthy-tasting waffles. I wanted totally junky fluffy waffles like when I was a kid. (I was a maniac for Belgian Waffles and would order them at any opportunity I had in restaurants. I remember going to Disney World and ordering waffles EVERY morning in the hotel, even though they were massive. Whipped cream and berries, waffle, heaven. I definitely need to do whipped cream berry waffles soon!)

Anyway, unlike the waffle iron I had 10 years ago, the one I just purchased ($20 at Target) seems to work just fine. No sticking, no separation of the waffle into pathetic halves.

Topped the waffles with the fried seitan and some maple syrup. I felt like I should have made some sort of vegetable or side dish to go with this to at least make an attempt at nutritional value, but decided to heck with it, a girl can eat nothing but fried things, sugar, and carbs for dinner once in a while!
