One of the things I want to change about how I eat is to start bringing lunches to work instead of buying them, and also eating smaller meals throughout the day instead of waiting until I’m ravenous and then gobbling down too much at once. The problem is that I’m not generally organized enough to plan ahead for what to bring, and I’m also not happy eating sandwiches every day. On Thursday of last week I brought an easy and successful lunch with me, and it didn’t involve any planning ahead since it basically involved grabbing a bunch of stuff from the fridge in the morning and tossing it in a bag.
I took a chunk of baguette, a tub of hummus and a tub of Tofutti french onion cream cheese (was unsure of which I’d feel like eating so I took both!), a couple of dill pickles that my dad made, a chunk of store-bought roasted red pepper. I also found some hot pepper spread in the office fridge that was left over from a lunch meeting where hoagies were provided. I brought an apple along too although I didn’t end up eating it that day.

I ended up eating the cream cheese and saving the hummus for later. Spread a chunk of bread with the cream cheese, a little bit of the hot peppers, and a few chunks of the roasted red peppers. Yummy. I tried eating a little bit whenever I felt hungry, even if it wasn’t the proper “lunch time.” I felt like eating like that made my energy levels much more consistent throughout the day. I’ll definitely be repeating this experiment!
