I think I’ve reached the point in this Vegan Month of Food blogging challenge where I’m hitting a wall, and I just have to push on through to the end. I didn’t post anything yesterday because I just made tacos, which were tasty but incredibly boring and involved a lot of premade, packaged stuff (taco seasoning, taco shells, taco sauce, boca crumbles, pre-made guacamole because the avocados in the store were too squishy, pre-made salsa because I have yet to venture into the realm of making my own salsa. I’m not really posting anything today because it was a super-quick meal of Tofurkey sausage sandwiches on baguettes with marinara sauce and Vegan Gourmet mozarella and onions and peppers. Again, tasty but not particularly interesting. I try not to rely too much on these processed meat substitute things, but they’re my fallback plan when all else fails or I’m short on time.
I did take photos of the taco fillings, but I’ve reached a point where I’m really like “oh, who wants to look at my taco fillings?!” I think I’ll be glad to get back into my habit of writing about food on occasion and only when I make something of particular interest (which is certainly not every day.) I’ve let my project of working my way through the Artful Vegan cookbook slide, because I got stuck on one recipe (can’t find baby artichokes and meyer lemons!). I think I need to get back into that project again and just skip anything that has impossible ingredients. I’ve also failed in one of my goals for Vegan MoFo, which was to try new recipes from my cookbooks. There are some cookbooks that I have looked through but never actually used. I just find it so much easier to improvise things on weeknights- things that I know work well, or maybe variations on old favorites. But I think this month has shown me that I’m stuck in a rut. Time to try some new things!
