Proof that there is better food than hotdogs and hamburgers to eat for a summer holiday!
The best corn on the cob I’ve had in a long time. My mom got it from a farm near where my parents live, although apparently that farmer got it from another farmer in Lancaster since his corn is not ready yet. Regardless, it was fresh and relatively local.

This is one of our favorite summer meals- a big fancy salad. The salad contained fresh red and green lettuce, kale and spinach (from our CSA), chickpeas, cherry tomatoes, onions, carrots, radishes, pickles, pepperoncini, and flax seeds. The dressing was a homemade creamy green goddess dressing made with veganaise, apple cider vinegar, and a spice mix from Penzey’s. Topped with homemade BBQ seitan, some of the new batch of pickled red onions, and some rosemary-dijon tofu and German potato salad made by D’s mom. I was never a fan of the regular American kind of potato salad, since I’m iffy on mayo-things to begin with and added to cold potatoes=yuck. I like vinaigrette-based potato salads much better.

And for dessert, some nice organic berries and vanilla soy coconut milk-based ice cream. (Just remembered that the container said both soy free and dairy free!)
