This is a delicious Thai Green Curry, recipe from Buddha’s Table: Thai Feasting Vegetarian Style. I’ll sometimes make curries using jarred curry paste, but for this one I made green curry paste from scratch. You can really tell the difference in the flavor! Includes tofu, snow peas, bamboo shoots, red pepper, onion, and zucchini.
